Avoid food waste - and the dodgy additives in commercial broth - and make your OWN broth using stems, skins and less-than-perfect veggies!
Serves: 6-7 cups
Ingredients
  • 5 cups fresh or frozen vegetable/herb scraps
  • 6-7 cups water
  • 2 bay leaves
  • 1 Tbsp sea salt
Instructions
  1. Place all ingredients in a large pot over low heat.
  2. Let simmer for about an hour.
  3. Strain (and NOW you can add the left-over pulp to the compost).
  4. Use the broth immediately, or refrigerate for later use, or freeze for much later use.
